Freeze pineapple on a dish, covered, at least 3 hours or overnight.

Puree pineapple with coconut milk, ice, seltzer, mint, honey and lime juice to taste in a blender, scraping down sides of blender, until smooth.

Immediately serve in two chilled glasses with a fresh mint sprig.
