Coleslaw with Raisins

In this simple, healthy salad, raisins add extra color and sweetness to complement the honey. This is especially good with fish, and casual dishes like hot dogs, and hamburgers.

Ingredients

Serves:

    • 1/2 small red cabbage, thinly sliced
    • 1/2 small green cabbage, thinly sliced
    • 2 carrots, coarsley grated
    • 1/4 cup rice wine vinegar
    • 2 tablespoons canola, sunflower, or other light oil
    • 2-3 tablespoons honey
    • 1/4-1/2 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 1/4 cup raisins

Directions

Put the sliced cabbage in a bowl with the carrots. In a small bowl, combine the vinegar, oil, honey, salt, pepper and raisins and mix well. Pour the mixture over the cabbage and carrots and toss well to coat.

Honey is not vegan! If recipes are mislabeled it's possible that a non vegan could make it for one without knowing; assuring that it was a vegan recipe.
