Cranberry Pear Pancakes

Holiday time is the best time to cook together as a family, and pancakes are the perfect food to prepare for kids of all ages. Dried cranberries are everywhere in snacks and salads. This recipe uses them for breakfast with fresh pears with a touch of cinnamon really spice up the average flapjack. Individually quick freeze these pancakes to enjoy them any time you want in under a minute with the help of the microwave.

Makes: 4-inch pancakes

Directions

Gather these tools: cutting board, chef's knife, dry and measuring cups, measuring spoons, large mixing bowl, whisk, nonstick saute pan or griddle, offset spatula

Preheat a nonstick saute pan or griddle.

In a large bowl, whisk together the flour, sugar, baking powder, cinnamon and salt. Make a small well in the center of the bowl. Add the milk, melted butter, eggs, and vanilla. Gently whisk the wet and dry ingredients together, just until well combined, but not lump-free. Gently stir in the cranberries and pears.

Using a dry measuring cup, pour 1/3-cup batter onto the hot pan for each pancake. Cook until the top of the pancake bubbles. Turn the pancake with a spatula and cook just until the underside is golden brown.

Here's the pro secret. Start with self-rising flour & skip the baking powder & salt. To activate the rising agent, warm the liquids to about 120 degrees F. Let the batter sit for 5 minutes, then pour....Alfred-
