Cranberry Relish

If you're looking for a cranberry sauce with zing, you've found it. Lively citrus and fresh ginger give the sweet-tart berries extra dimension.

Ingredients

Serves:

    • 2 navel oranges
    • 1 tablespoon freshly squeezed lemon juice
    • 2 (12 ounce) bags fresh or frozen cranberries
    • 1/2 cup dried cranberries
    • 3/4 cup sugar
    • 4 scallion greens, sliced (1 cup)
    • 1 tablespoon grated fresh peeled ginger root
    • 1/2 teaspoon ground cinnamon

Directions

Finely grate 2 teaspoons of zest from 1 orange. Cut away and discard peel and pith from oranges, then cut sections free from membranes. Transfer sections to a food processor fitted with a blade, squeezing any remaining juice from membranes into bowl of processor. Add remaining ingredients and pulse until finely chopped.

Chill, covered, at least 2 hours to allow flavors to develop.

I've made cranberry relish; I don't make it for the holidays, as my family prefers homemade cranberry sauce. Putting scallions in cranberry relish gives me a gag reflex--and I love scallions. Save them for the dressing - saute them with celery....

This sort of reminds me of one sauce the Neelys did on their show.Theirs was just with O J and the zest and a can of cranberry sauce.The ginger sounds good with this recipe.I would also add pecans to this.
