1. Wash spinach and put in a large pot, do not dry. Place lid on pot and cook over medium high heat 3 to 4 minutes or until spinach begins to wilt. Strain extra liquid.

2. Melt margarine in a pot and cook onion 3 to 5 minutes.

3. Whisk in flour and cook over medium low heat 1 minute, whisking continually.

4. Whisk in milk and bring to a boil. Continue boiling, whisking continually 1 minute or until mixture is thick.

5. Take off of heat and whisk in sour cream.

6. Spoon sauce over spinach and sprinkle with nutmeg, salt, and pepper.
