Directions
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk, stirring to combine. Add the salt and oil; beat until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn, and cook the other side.
Once you've prepared your crepes, fill them with your favorite ingredients (suggestions below) and fold over twice, or roll, to close in the ingredients. Return to the pan, or place in a 350°F oven, for 2-3 minutes.
Filling suggestions (per crepe):
1 1/2 tablespoons chocolate spread
1 1/2 tablespoons jam

I had some clumping issues following the mixing instructions stated here. Next time I would mix the eggs and milk together first, then add them into the flour. Lovely recipe though! Delicious.
