This recipe is easy, yet feels special. The sprinkle of black pepper really pulls the flavors together at the end. You can use any type of honey (some are sweeter, others more floral, some pleasingly bitter/earthy). Keep the walnuts pieces large and chop in half or break into large pieces with hands. This looks prettier (and tastes better) if pieces are big.

Ingredients

Serves:

    • 3/4 cup walnut halves
    • 1 baguette
    • 2 tablespoons extra-virgin olive oil
    • 5 ounces soft goat cheese, at room temperature
    • 2 teaspoons finely chopped flat-leaf parsley
    • 2 teaspoons finely chopped fresh chives
    • 2 tablespoons plus 1 1/2 teaspoons honey, divided
    • 1/8 teaspoon freshly ground black pepper plus more for sprinkling

Directions

Preheat oven to 350°F with rack in middle. Line a baking sheet with parchment paper.

Spread nuts in a single layer on a second baking sheet. Toast in the oven, stirring once, until lightly golden and fragrant, 5 to 7 minutes. Transfer baking sheet to a wire rack and let nuts cool. Keep oven on.

On a diagonal, cut 16 (1/3 inch) bread slices from baguette (reserve any remaining bread for another use). Arrange slices in a single layer on the prepared baking sheet and drizzle with oil. Bake, turning once, until toasts are crisp and edges are pale golden, about 12 minutes. Transfer baking sheet to a wire rack and let toasts cool.

Meanwhile, in a bowl, stir together cheese, parsley, chives, 1 1/2 teaspoons honey and pepper. Roughly chop nuts.

Spread cheese mixture onto the toasts and transfer toasts to a serving plate. Top with walnuts, drizzle with remaining 2 tablespoons honey and sprinkle with pepper.
