Deviled Eggs

Directions
With 6 eggs brought up to room temperature add them to a small pot of cold water, covering the eggs by about 2 inches of water.
Keep the water at a simmer. Cook the eggs for 7-9 minutes. Once they are done, run the cooked eggs under cold water.
Next cut the eggs in half lengthwise and remove the yokes.
Place them in a bowl
Set the whites aside on a contoured egg serving tray if you have one.
Wipe your knife with a damp towel between each cut to make a clean cut.
Now mash the yolks with mayonnaise, mustard, lemon juice and salt and pepper to taste.
Refill the whites using about a tablespoon of the yoke mixture for each egg half.
Now finish them off by garnishing with chives and a sprinkle of paprika.

To the person asking about peeling fresh eggs -- place them in a bowl of cold water and as soon as they're cool, peel them underwater in the bowl.

As you are running water over them crack them all over and let them sit. The steam that forms inside causes the shell to turn loose

I always make my "Basic Deviled Eggs"...Turmeric is good to use too!!(It adds color to the yolks & is healthy) Also try "Gourmet Eggs". Use:Bacon bits,Chopped Olives,Mustard seed, Dill,Stoneground,& Horse radish 4 changes.POP !!!
