A shortcut method using instant potatoes with delicious results—just like grandma makes, but without all the work!

Ingredients

Serves: pancakes

    • 1 3/4 cup Swanson® Chicken Broth (Regular, Natural GoodnessTM or Certified Organic)
    • Generous dash ground black pepper
    • 1 1/2 cup instant mashed potatoes flakes or buds
    • 1 medium green onion , coarsely chopped (about 2 tablespoons)

Directions

Heat the broth and pepper in a 2-quart saucepan over high heat to a boil. Remove the saucepan from the heat. Add the potato flakes and onion and stir until the liquid is absorbed. Shape the potato mixture into 4 (4-inch) pancakes.

Cook the pancakes in a 10-inch nonstick skillet over medium-high heat until they're browned on both sides.
