Farfalle with Spicy Sausage and Butternut Squash

Ingredients

Serves:

    • 3 tablespoon(s) extra-virgin olive oil
    • 3/4 pound(s) peeled butternut squash, cut into 1/2-inch pieces 2 cups
    • Salt
    • 1 onion, diced
    • 1 pound(s) hot Italian sausage, casings removed
    • 12 ounce(s) farfalle
    • 1/2 cup(s) freshly ground Pecorino Romano
    • 1 tablespoon(s) chopped flat-leaf parsley

Directions

1. In a large, deep skillet, heat 2 tablespoons of the olive oil. Add the squash, season lightly with salt and cook over high heat, stirring, until tender and lightly browned, about 8 minutes. Using a slotted spoon, transfer the squash to a plate. Add the remaining 1 tablespoon of olive oil to the skillet. Add the onion and sausage and cook over high heat, breaking up the sausage with a spoon, until lightly browned and cooked through. Return the squash to the skillet.

2. Meanwhile, in a large pot of boiling salted water, cook the pasta until al dente. Drain the pasta, reserving 1 cup of the cooking water. Add the pasta to the skillet along with the reserved cooking water and the cheese and cook over moderately high heat, stirring, until the sauce is thick and creamy, 1 to 2 minutes. Transfer the pasta to a bowl, sprinkle with the parsley and serve right away.

this is a GREAT dish...I substituted mild italian sausage because spicy is sometimes a bit too spicy...I added about 1/2 of a diced sweet red pepper at the same time I sauteed the onions and sausage and it was a good addition..it will be made again..

Made this tonight. Or should I say my hubby made it! Really! However, we weren't too impressed. Used recipe as is. The hot sausage was way too hot for us. It didn't go well with the sweetness of the squash. Just our impression!

My family loved this. I used orecchiete instead of farfalle, and used sweet sausage and crushed red pepper instead of the hot sausage. Simple, fast and delicious.

I made this tonight and it was a hit. DEE-********** only thing I changed was I used mostly cheese and parsley sausage and a little hot sausage. I didn't want to make it too spicy that the kids would not eat it. Hardest part was peeling the squash

Just cooked this dish tonight for my husband & I...delicious! I did toy around with the ingredients to fit with whatever was in the pantry. Instead I used acorn squash, hot Italian turkey sausage links & Parmesan cheese...a new family keeper.

This was amazing! I used half turkey italian sausage and half mild italian sausage. I also used parm cheese instead of romano... i like parmesan better, personally. Sooooooo Good!!! Fast and simple too!

Not much said about serving with the butternut once it's in the skillet. Butternut is highly nutritious and nothing was mentioned ********* value.
