Fat Asparagus with Mushrooms and Cream

Put 2 tablespoons of the butter or oil in a skillet, turn the heat to medium-high, and add the mushrooms, shallot or onion, salt and pepper, and stir. Cook, stirring occasionally, until the mushrooms soften, 5 to 10 minutes. Add the cream and boil, stirring occasionally, until the mixture is thick, about 10 minutes.

Meanwhile, boil or steam the asparagus for about 5 minutes, or until bright green and just about tender. Drain, then serve with the mushroom sauce, garnished with any of the optional herbs, if you like.
