I once had a delicious crunchy fish fillet in a medium-fancy restaurant. I couldn't figure out how the crust had been made and was shocked when the waiter told me it was instant-mashed potato flakes. Instant potatoes in a restaurant? --But why not, if it worked? This recipe goes a bit deeper into the concept. Since traditional fish and chips are served with malt vinegar, I like to use salt-and-vinegar chips here. If you think that's too assertive, use regular chips and serve vinegar (or lemon wedges) on the side.

Preheat the oven to 350°F.

In a 9-by-13-inch baking dish, melt the butter in the oven. When it's melted, whisk the minced garlic into it.

In a shallow, rimmed dish, toss together the grated Parmesan and crushed potato chips.

Flop each piece of fish in the melted butter-garlic mixture. Then coat each piece with the crumb mixture and return to the baking dish.

Bake for 20 minutes, or until the fish flakes with a fork. Serve immediately.

what sort of no fry recipes are these - ANOTHER with potato chips - do you KNOW how unhealthy those are?
