Five-Spice Applesauce

This chunky applesauce is spiked with Chinese five-spice powder, a fragrant and slightly savory combination of cinnamon, anise, ginger, fennel, and black pepper.

Ingredients

Makes: cups

    • 6 pounds (about 12) Golden Delicious apples, peeled, cored, and cut into 1-inch pieces
    • 3/4 cup orange juice
    • 1/3 cup sugar
    • 2 teaspoons Chinese five-spice powder

Directions

Combine apples with orange juice, sugar, and five-spice powder in a large pot. Cook on medium-low heat, covered and stirring occasionally, until fruit is very tender and broken down into a sauce, about 45 minutes. Mash any chunky apples with the back of a spoon if desired. Cool to room temperature or chill before serving.

Make ahead: Applesauce can be be made 1 week ahead, kept covered and chilled.

I don't cook mine in orange juice..instead, I use apple juice. In addition to the sugar for a little sweetness, I add 1/4 teaspoon of ground cloves and 1/2 teaspoon of cinnamon. I also add a drop or two of red food coloring for a "homemade" look.
