Preheat the oven to 350°F. Heat a small skillet over medium-high heat. Coat with a thick layer of cooking spray. Add the banana slices. Sprinkle the brown sugar and cinnamon over top. Cook the bananas, 2 to 3 minutes, turning occasionally until they start the brown. Reduce the heat to medium if they stick. Reduce the heat to low and carefully add the water and rum. Cook one additional minute, scrapping any brown bits up sticking to the inside of the skillet. Turn the heat off and set aside.

Place eggs, egg white, milk, vanilla extract, lemon zest, and nutmeg in a shallow dish. Whisk until smooth. Press the bread into the egg mixture turning to coat well. Heat a large skillet over high heat. Add 2 teaspoons of the oil. Add four slices of the egg coated bread. Cook 2 minutes or until the underside of the bread starts to brown. Coat the tops of the bread with a light layer of cooking spray before turning. Cook one more minute to brown and transfer the slices onto a baking sheet. Slide in the oven and repeat with remaining slices. Bake the French toast about 5 minutes or until the centers are firm to the touch. Remove from the oven and serve immediately with the bananas.

Its not very good, followed directions exactly. Make your own french toast not this recipe. This one goes in the circular file.
