1 cup uncooked quinoa6 large strawberries, sliced3 oz blueberries (about 1/2 cup)2 small nectarines, sliced1 pear, sliced½ cup pecans4 oz goat cheese, crumbled¼ cup fresh cilantro, chopped


  1. Make ahead: Cook quinoa according to package directions. Let chill in the fridge until completely cool.



6 large strawberries, chopped
1 Tbsp olive oil
½ Tbsp honey
2 tsp lime juice


  1. In a blender or food processor, blend together all dressing ingredients.
  2. Split salad ingredients between two salad bowls. Drizzle with strawberry dressing. Serve cold.
