A simple tilt of vinegar and mustard combined with mild scallions over warm potatoes gives this German favorite a brighter dimension without any sacrifice towards taste or tradition.

Boil potatoes in a large pot of salted water until just tender, about 8 minutes, then drain in a colander then transfer to a large bowl and stir in scallions.

Meanwhile, stir together vinegar, mustard, oil, sugar, salt and pepper in a large bowl.

Pour dressing over hot potatoes and gently stir to combine. Adjust seasoning and stir in scallions just before serving. Serve warm
