    • 4 tablespoons butter or olive oil
    • 1 cup shelled fresh or frozen peas (you don't need to defrost them), or snow peas
    • 1 pound penne or other cut pasta
    • freshly ground black pepper to taste
    • 1 to 1 1/2 cups freshly grated Parmesan cheese
    • FOR GINA NOODLES WITH CREAM:
    • 1/2 cup heavy cream
    • FOR GINA NOODLES WITH HAM:
    • 1/2 cup diced ham, minced bacon, or prosciutto with the peas

Directions

Bring a large pot of water to a boil and salt it. Melt half the butter or heat half the oil in a skillet or saucepan; add the peas and a couple of tablespoons of water and let simmer; add more water as necessary, keeping the peas moist.

Cook the pasta until it is tender but firm. Drain, then toss with the remaining butter or oil, and the peas. Taste and add salt and pepper as necessary, then toss with the Parmesan and serve.

For Gina Noodles with Cream: When the peas and pasta are done, toss them with 1/2 cup heavy cream and the remaining butter (much better than oil in this case). Reheat a bit, then add the Parmesan and serve.

For Gina Noodles with Ham: Cook 1/2 cup diced ham, minced bacon, or prosciutto with the peas. Proceed as above.
