Gingered Chicken Vegetable Ramen Soup

When you're feeling under the weather-maybe a cold is coming on-and you're in need of a little TLC, you're only a few minutes away from a very comforting chicken noodle soup when you use quick-cooking chicken tenders and ramen noodles. Admittedly, it's not the same as your mother's chicken soup cooked from scratch but it's way better than take-out.

Directions

Puree ginger in water in blender. Transfer to a 3- to 4-quart heavy saucepan and add broth. Bring to a boil.

Add chicken tenders and reduce heat, then simmer slowly, covered, until just cooked through, about 5 minutes. Fish out tenders with tongs and chill in a bowl in fridge while finishing soup.

Add carrots and celery and simmer, covered, until tender, about 10 minutes.

Add ramen noodles and simmer, covered, until just tender, about 3 minutes and stir in parsley.

While noodles are cooking, coarsely shred chicken and then stir into hot soup.

I'd add a little bit of roasted sesame oil and a dash of soy sauce or tamari. Gosh, it's so easy to make great food at home. Kids should learn these skills early to eat well and to save money. Parents can involve kids in cooking prep, washing veggies, peeling ginger, etc. They say that kids who are involved in some way in food prep will eat what they prep. Even in just making a good sandwich.
