Granola Bars

Granola bars are so popular that they pack the isles in every grocery store. They are actually very easy to make homemade. The proper mix of oats, seasoning, sweetness, and dried fruit is all you need. Currants are even better than raisins for granola bars because they are half the size with just as much flavor. The result is a pleasing texture in every bite for a deliciously chewy granola bar.

Ingredients

Makes: to 16 bars

Directions

Gather these tools: cutting board, chef's knife, dry measuring cups, measuring spoons, large mixing bowl, fork, grill or grill pan, small saucepan, wooden spoon, sauté pan, offset spatula

Preheat the oven to 350 F. Line a 9" x 13" pan with wax or parchment paper. Stir together the oats, brown sugar, wheat germ, currants, apricots, salt, and cinnamon in large bowl, being sure to break up any clumps of sugar or dried fruit. Set aside.

In a smaller bowl, mix the honey, maple syrup, oil, and vanilla. Pour over the dry ingredients and mix well.

Pour the mixture into the prepared baking dish and bake for 30 minutes, or until the edges turn golden brown.

Remove from the oven and lift the wax or parchment paper from the pan. Let the granola slab cool for 5 minutes before removing the paper and cutting into bars.

Cool completely before eating or wrapping.

I love most of your ingredients in this recipe, but how about suggestions for a healthier sweetener than refined sugar? Stevia?

It's a place to start for ideas but I would want to replace some of your "Healthy" ingredients with actually healthy ingredients

In the bottom of a 15x20 pan roast 8 cups of oats (20 min in 350 oven). In a large bowl add oats, 1/2 c organic coconut, 1/2 c sunflower seeds, 1 c pecans, 1/2 c dried cherries.

In a pot 2 c of honey, 1/2 c oil, vanilla, and cinnamon - heated slightly to thin.

Mix dry to the wet, let cool just a bit and add 1/2 c of chocolate chips. Put ingredients into the same roasting pan (foil lined). Press down with wet hands. Bake 20 minutes @325 degrees.
It took me awhile to make something that we all liked. The crumbs go into a brown bag for granola as you cut your squares.

I made this recipe but it stuck to greased parchment and burnt around the edges.
I tried it again on greased wax paper and the wax melted and paper stuck to granola.
It was a waste of healthy ingredients for me.

Maybe it was greasing parchment paper. I don't grease it. Also in a post above,she uses foil. I would haul out my pyrex, glass and may just try one of these since they sound so good. Oh, I wouldn't grease wax paper, I don't think I would use it.

The recipe sounds good but is it good for you.

What is the nutritional value of these recipies which includes, fat content, carbo, protein etc.
I would not attempt this endeavor without the appropriate nutritional facts.

Lorraine and Amy, read the ingredient packages. That will give you an idea if you want to use those ingredients or subsitute. Simple.
