Serves:

    • 1 large pink grapefruit, about 1/2 pound, sectioned
    • 1 small Haas avocado, diced
    • 2 green onions, thinly sliced
    • Zest and juice of one lime
    • 1/4 cup cilantro, packed, chopped
    • 1/4 cup pitted black olives, such as Kalamata
    • 1/4 teaspoon pitted black olives, such as Kalamata

Directions

Toss the grapefruit, avocado, onion, lime zest and juice, cilantro, olives and salt in a large bowl. Serve immediately or store refrigerated in an airtight container for up to 3 days.
