Grilled Acorn Squash with Cilantro Mojo

The sweetness of acorn squash is a wonderful platform for the big flavor of the cilantro mojo. A little kick of garlic in the sauce reminds you that you're alive.

Peel, halve and seed squash, then cut crosswise into 1/2-inch wide slices. Toss squash with 2 tablespoons oil, and 1/2 teaspoon each salt and pepper.

Heat grill pan over medium heat until hot. Grill squash, in batches if necessary, covered, turning occasionally, until squash is tender, about 10 minutes per batch.

Using the side of a knife, mince and mash garlic to a paste with 1/4 teaspoon salt. Stir together garlic with cilantro, lime juice and remaining 6 tablespoons oil. Season mojo to taste with salt and pepper. Drizzle mojo over grilled squash.
