Here's grilling expert Elizabeth Karmel's 101 lesson on grilling bone-in chicken pieces. All you need is good quality chicken, olive oil, salt and pepper, plus a grill.

Remove and discard excess fat from chicken. Pat dry. Brush lightly with oil. Season with salt and pepper. Place chicken, bone-side down in center of cooking grate. You do not need to turn the chicken pieces.

Grill-roast until breast meat near bone registers 165 F and thigh meat registers 180 F, between 35-55 minutes depending on size. If you don't have a meat thermometer, cook until no longer pink and the juices run clear. Remove and let sit 10 minutes before serving.

NOTE: If preparing barbecued chicken, season with favorite barbecue rub and brush sauce on chicken during the last 15 minutes of cooking time to prevent burning.

If this recipe is an example that she's a grilling expert I'm a Major League Baseball All-Star. I'm not impressed. The instructions are incomplete - How hot is the grill? Do you cook with direct or indirect heat? Season with just Olive oil, salt & pepper? A kid in Home Ec could could have made a better recipe.
