Grilled Quesadillas

Ten years ago, few of us had heard of quesadillas. Now we can’t seem to live without them. These Mexican grilled cheese “sandwiches,” made from chiles and cheese sandwiched between tortillas, have taken the United States by storm. Most are panfried, but this recipe features a quesadilla that’s actually cooked on the grill. Feel free to vary the ingredients for the filling, but don’t wander away when cooking them. Tortillas burn like paper.

Directions

Combine the cheese, sour cream, scallions, tomato, cilantro, jalapeños, and cumin in a small bowl and stir to mix. Season with salt and black pepper to taste.

Set up the grill for direct grilling and preheat to medium-high.

When ready to cook, place 4 tortillas on a work surface and spread the cheese mixture evenly over them. Press the remaining tortillas on top to make sandwiches.

Brush and oil the grill grate. Place the quesadillas on the hot grill grate and grill until lightly browned on both sides, 2 to 4 minutes per side, turning them carefully with a large spatula. Cut each quesadilla into 8 wedges before serving.

NOTE: For spicier quesadillas, use thinly sliced fresh jalapeños,with or without the seeds.
