Hearty Pork Stew

Pork and sweet potatoes are a winning pair that come together in the slow cooker to make this comforting, fork-tender dish.

Ingredients

Serves:

    • 2 pound sweet potato , peeled and cut into 2" pieces (about 2 cups)
    • 2 pound boneless pork shoulder roast, cut into 1" pieces
    • 1 can (14 1/2 oz.) Campbell's® Chicken Gravy
    • 1 teaspoon dried thyme leaves , crushed
    • 1/2 teaspoon crushed red pepper
    • 1 can (15 oz.) black-eyed peas , rinsed and drained

Directions

PLACE potatoes in 4- to 6-qt. slow cooker. Top with pork.

MIX gravy, thyme, red pepper and peas. Pour over pork and potatoes.

COVER and cook on LOW for 7 to 8 hr.* or until pork is fork-tender.

TIP: *Or on HIGH 4 to 5 hr.
