Herring in Cream Sauce with Apples and Walnuts

Directions
Drain the herring and reserve the liquid. Cut the herring filets into 11/2-inch pieces and place in a bowl. Cover with the onions and set aside.
In another bowl, combine the sour cream, cider vinegar, sugar, and black pepper. Taste to verify a balance of sweet and sour. If needed, add a little more sugar for more sweet, or add a bit of the reserved wine from the drained herring for more sour.
Combine the herring and onions with the sour cream mixture. Fold in the apples and walnuts.
Refrigerate overnight. Serve with crackers, bagel chips, or pumpernickel bread.
