Heat a large skillet over high heat. Coat with a layer of cooking spray. Add the mushrooms and cook 1 to 2 minutes, stirring once or twice until the mushrooms start to soften (add one tablespoon of water if they begin to stick).

Add the garlic, ginger and chile, and reduce heat to medium. Cook another 1 to 2 minutes until the mushrooms are cooked and the garlic is fragrant.

Sprinkle over the Chinese five spice and stir to coat. Add the noodles and broth. Cover and reduce heat. Simmer 4 to 5 minutes until the noodles are tender.

Add the spinach and butter, and cook 1 to 2 minutes more until the spinach is wilted. Garnish with scallions and cilantro and serve immediately.

I keep most of these ingredients on hand at all times. You can use thin spaghetti noodles and vary the ingredients to what you like. I made a similar recipe yesterday with chicken broth, grated carrots, spaghetti noodles, brown mushrooms but no 5-spice plus the rest of the ingredients in this recipe and it was really great! Even my husband loved it!

Go to your local asian/farmers market to get the ingredients, it cheap and probably healthier. I'm a college student so this is a cool, tasty, simple thing to make. I always cook four new things as the week ends and then I have left overs to alternate for days, then it starts all over. ^_^

Doesn't look so difficult to me. My husband has kidney problems and high blood pressure so sodium is of great concern. He also loves those packaged soups, so this seems to be a great alternative. Will try this really soon

Funny thing, I do have all of these things in my pantry. Have them on a regular basis because I cook on a regular basis. This is not a difficult recipe but it is fun to make and tast's good too. 10 packs for a dollar is fine but someone else's idea of what good should taste like. How sad you are for not even trying

I have one of these ingrediants in my kitchen, and that the non-stick spray. I'd have to spend $25 to make this and then eat it for 3-4 meals. Someone please make recipes for single people that don't cost a fortune.

Use a pack of Ramen Noodles then but add an extra cup of water, one chopped potato and one chopped carrot. Cook
about 10 minutes before finishing the package instructionbs.

I love this and it greatly reduces all that saltiness of the
dish.

Does anybody keep all these ingredients on hand?
Why would anyone want to waste so much of their time making this when you can buy ten packs for a buck? Eleven different ingredients? This recipe is a joke. !!! Then think of the clean up time.

Yes, I for one, like to know exactly what ingredients are in foods that I am putting in my body! Any processed, pre-prepared stuff can be easily be made better, cheaper and more nutritious if you do it yourself.
