Key Lime Pie Ice Cream Sandwiches

Ice cream sandwiches are a favorite summertime treat, and so too is key lime pie. Combining the two desserts into one is quick and easy when you use graham crackers and lime JELL-O(tm). Use the sugar-free JELL-O(tm) or low fat graham crackers for an even lighter dessert.

Ingredients

Serves:

    • 24 graham cracker squares
    • 8 egg whites
    • 3 tablespoons sugar
    • 1 1/2 cups heavy cream
    • 1 package lime JELL-O (3 ounces per package)

Directions

Gather these tools: cutting board or sheet pan; large bowls; measuring spoons; dry measuring cup; whisk or electric hand mixer; rubber spatula; offset spatula; resealable plastic bag; scissors; plastic wrap.

In a large mixing bowl, beat the egg whites on low speed until they begin to foam. Slowly add the sugar, a bit at a time, and gradually increase the speed. Beat until glossy and stiff peaks form. Set the meringue aside.

In another large mixing bowl, beat the heavy cream on medium-high speed until turns into whipped cream. Sprinkle the JELL-O(tm) packet evenly over the whipped cream and gently fold until fully incorporated. Gently fold in the meringue and place the lime mousse in a large resealable plastic bag. Remove the air from the bag, close, and snip a small corner of the bag with a scissor.

Pipe the lime mousse on each of 12 of the graham crackers. Top with remaining graham crackers.

Set the 12 ice cream sandwiches in the freezer for at least 4 hours, or overnight. Give the sandwiches plenty of time in the freezer so that the graham crackers soften and the lime mousse freezes. Wrap each sandwich in plastic wrap or seal in an airtight container.

Made the receipe last night,YUMMM! i realized I only had a few crackers left, so i made the few i had and after my husband had his, he told me i needed to get to the store ASAP to make more!:)My kids loved it too! key lime was very refreshing! Thanks

Regarding the safe egg question. The answer is simple, use pasteurized eggs. I use them for any recipe calling for raw eggs and can't tell a difference in flavor. Check out safeeggs.com for retailers near you.

I made the key lime sandwiches tonight with my daughter. They were easy to make and they tasted great! The raw egg whites were not a worry for me.

this recipe is good if your into key lime i also like to use philadelphia cream cheese filling already made and do the same with graham crackers excellent if you like cheese cake and you can always add any additional flavours to it

I agree with 'eclx3corn' the easier version works for me. I don't care for the taste of key lime, so I would sub orange sherbert & low fat vanilla ice cream

Don't care for "key lime" but don't mind lime Jello-Key limes are a very different taste from regular limes sold in all stores. Might add a pinch of fresh lime zest. Also could make with lemon Jello on brown edge wafers.

You can make this a lot lighter and easier if you use lime sherbet w/extra squeeze of lime and (light)vanilla ice cream. Soften sherbet and scoop/spread on half of chocolate or regular graham cracker. Do the same with vanilla and slap them together.

Just read the labels of the ingredients you are using and you can come up with the nutritional value.
