Lemon Blueberry Ricotta Pancakes with Blueberry Syrup

Ingredients

Serves:

    • 4 large free-range organic eggs
    • 3/4 cup organic while milk
    • 1 cup whole milk ricotta
    • 1/3 cup cottage cheese
    • 2 tablespoons honey
    • 1 1/2 tablespoons finely grated lemon zest
    • 1/2 cup all-purpose flour
    • 1/2 cup whole wheat flour
    • 1 3/4 teaspoons baking powder
    • 1/4 teaspoon freshly ground nutmeg
    • 1/8 teaspoon sea salt
    • 1 cup fresh blueberries or 1/2 cup frozen
    • melted butter for brushing skillet
    • BLUEBERRY SYRUP:
    • 1 6-ounce container fresh or frozen blueberries
    • 2 tablespoons maple syrup

Directions

Preheat oven to 225°F

Whisk together flours, baking powder, nutmeg and salt. Whisk dry ingredients into wet until just combined.

Beat egg whites in a medium bowl with an electric mixer until they just hold stiff peaks. Gently fold blueberries into batter.

Brush a large non-stick skillet or cast iron griddle with a little butter and heat over moderately high heat until droplets of water scatter over the griddle. Pour the batter onto the griddle by 1/4 cup measures and cook pancakes for 1 to 2 minutes on each side, or until golden, brushing the griddle with some of the melted butter as necessary.

Transfer pancakes as they are cooked to a sheet pan and keep warm in a preheated oven.

To make syrup, bring blueberries to a simmer in a small skillet with maple syrup until blueberries burst, mixture is thickened and reduced to 2/3 cup, about 10 minutes. Serve immediately or transfer to a bowl and keep chilled, covered.

Note: Nutrition information is for 2 pancakes (recipe makes about 20) and about 1/10 of the blueberry syrup.
