Lightened Up Beef & Vegetable Stir-Fry

Ingredients

1 lb boneless beef sirloin steak, 3/4-inch thick
vegetable cooking spray
2 cup broccoli florets
2 cup sliced mushrooms
2 cup onion wedges
½ tsp garlic powder
4 clove garlic, minced
1 can (10 3/4 ounces) Campbell's® Healthy Request® Condensed Cream of Mushroom Soup
½ cup water
1 Tbsp low-sodium soy sauce
4 cup hot cooked rice, cooked without salt

Directions

Slice beef into very thin strips.

Spray skillet with cooking spray and heat over medium-high heat 1 minute. Add beef and cook until browned, stirring often. Remove beef.

Remove skillet from heat. Spray with cooking spray. Add broccoli, mushrooms, onion and garlic powder and cook until tender-crisp.

Add soup, water and soy sauce. Heat to a boil. Return beef to skillet and heat through. Serve over rice.

Tip: To make slicing easier, freeze beef 1 hour.
