Ingredients

Serves:

    • 1 tablespoon sea salt
    • 12 oiunces whole wheat pasta shells
    • 3/4 cup panko breadcrumbs
    • 4 tablespoons finely grated fresh Parmesan
    • 4 scallions, green part only, chopped (1/2 cup)
    • 2 tablespoons olive oil, plus additional for oiling dish
    • 1 onion, chopped
    • 1/2 pound shitake mushrooms, stems discarded and caps sliced
    • 1/2 pound lacinato kale, center ribs discarded and leaves coarsely chopped (about 3 1/2 cups)
    • 3 garlic cloves, finely chopped
    • 2 packages frozen squash puree (12 ounces each), thawed
    • 1 3/4 cup whole milk
    • 1/2 cup crumbled goat cheese (about 2 ounces)
    • 1/4 teaspoon ground nutmeg

Directions

Preheat oven to 375° and lightly oil a 2-quart baking dish.

Bring a large pot of water to a boil and add 1 tablespoon salt. Boil noodles, until al dente, about 4 minutes. Drain and return to pot.

Heat 1 tablespoon oil in a large non-stick skillet over moderate heat, and cook onion, stirring, until softened, about 3 minutes. Add mushrooms, kale and garlic; cook, stirring, until tender, about 4 minutes. Add squash, then milk and goat cheese and cook, stirring, until heated through, about 2 minutes. Stir in 2 tablespoons Parmesan, nutmeg and salt and pepper to taste. Stir noodles in pot and toss to combine well.

Spoon mixture into prepared baking dish and top with panko mixture. Bake in middle of oven until golden brown on top and heated through, about 20 minutes.

Top with additional grated Parmesan, if desired.

This gets one star. This is my first time making a healthy version of macaroni and cheese. It had a bitter taste. Some of the directions were left out causing more preparation time to figure it out. I wouldn't make it again.

A little time-consuming, but worth it. I give it three stars. I pureéd my own squash since it was hard to find at the store, and I substituted ******* with portabella, but the lactose intolerant person at our table appeciated the goat cheese!

Ingredients and directions may be missing ******** easy to work out. This was a hit at a holiday party with adults and kids alike. I would add a bit more mushrooms but that's all.

The dish is not as creamy as the classic mac and cheese, and slightly sweeter due to the use of kale. The directions were a little confusing, due to being incomplete, but making this is not a rocket-science project; it was actually pretty easy.

The finished product tasted a little sweeter than I expected, possibly because of the kale. If you love this vegetable, this is a good use for it. The dish is not as creamy as classic mac and cheese, and kale is not an easy product to find here.

Dark Lady.

I was concerned while putting this recipe together. I added more goat and Parmesan cheese and was liberal with the pepper. Once it was mixed with the noodles (I used regular macaroni) and baked for 20 minutes, it actually came out pretty tasty.

YES this is hard to follow since they left out ingredients. like when to add the milk, scallions and how to make the panko mixture... are there not proofreaders for Kitchen daily to double check these recipes??? I am in the middle of making this!

This was the worst recipe I have ever tried. Part of the directions were left out, ************ the video and being the cook that I am I figured it out. Also a waste of $30 just to make mac and cheese. Ina Garten has the best mac and cheese recipe

They are missing some of the directions and ingredients in the recipe. I can figure it out, but things are left out.
