Directions
Place the milk and sugar in small saucepan. Heat over medium heat and cook 1 to 2 minutes until the mixture begins to simmer. Place the egg yolks in a small bowl and whisk in a few tablespoons of the milk. Return the egg mixture to the saucepan. Heat over low heat whisking continuously until the mixture thickens enough to coat the back of a spoon.
Turn off the heat and whisk in the lemon and zest. Divide the mixture between 4 small ramekins and sprinkle with the graham cracker crumbs. Cover with plastic wrap and chill one hour or until firm.
