Maple-Pecan Granola with Dried Fruit

Position a rack in the bottom third of the oven and preheat to 325°F. Coat a baking sheet with canola oil. Alternatively, use a silpat baking mat.

In a large bowl, combine the oats, pecans, slivered and whole almonds (or other nuts) and the salt and stir. Set aside.

Combine the maple syrup, canola oil and honey in a saucepan and heat over medium heat until just bubbling. Pour the maple syrup mixture over the oat mixture and stir with a wooden spoon until the mixture is thoroughly coated.

Spread the oats onto the baking sheet in an even layer. Bake 30 minutes. Using a metal spatula, turn the granola over and bake 10 minutes more. Remove the pan from the oven. Sprinkle the dried fruit into the granola. Let cool completely in the pan. Pour into a decorative jar with a tight-fitting lid and decorate with ribbons.

Makes about 3 cups (approximately 6 servings)

Thanks for the recipe. I love granola. I have an easier way of making granola. i roast the oats with the honey and add the other stuff when the oats are done. in my opinion it tastes better and is healthier than cooking the nuts (doesnt seem necessary.)

Might have spoken too soon. Perhaps the nuts are not baked? i forgot to say that i roast my oat mixture at 375 (oats, honey and oil all together. i dont cook anything else) Thanks
