Pre-heat oven to 450 degrees F. On a small roasting dish lay out fruit and drizzle with melted butter. Drizzle with maple syrup then place in the oven for 10 minutes until fruit is just caramelized around the edges. Remove from oven and allow it to cool slightly.

In a large mixing bowl whisk together ricotta, confectioners sugar and lemon zest.

To assemble place some fruit in the bottom of a glass and a little of the syrup from the roasting tray. Sprinkle with a few toasted walnuts. Place a heaping tablespoon of sweetened ricotta on top. Repeat process. Finish with walnuts and a drizzle of the sweet syrup from the roasting tray.
