Directions

Put potatoes in a large pot with 2-inches of cold water to cover. Bring water to a boil and add salt. Simmer potatoes until tender when poked with a fork, about 20 minutes. Reserve 1/2 cup cooking water and drain potatoes in a colander.

Return potatoes to pot and mash with reserved cooking water, butter, milk, and chives.
