Preheat oven to 425°F and lightly rub olive oil on 2 large sheet pans.

Heat 1 tablespoon oil in a large saucepan over moderately high heat and cook beef, breaking it up with a spoon, until no longer pink, about 5 minutes. Transfer beef with a slotted spoon to a bowl. Cook onion in saucepan, stirring, until softened, about 3 minutes. Add garlic and cook, 1 minute. Add tomatoes and beef and simmer, until thickened, about 30 minutes.

Meanwhile, arrange vegetables in one layer and lightly brush olive on the veggies and roast in upper and lower thirds of oven, turning once, until tender and golden brown, 15 to 20 minutes.

Reduce oven temperature to 375°F. Stir together ricotta, 1/2 cup mozzarella, egg, Parmesan, garlic and pepper and salt.

Layer lasagna by spooning 1/3 of sauce into bottom of an 8-inch square baking dish with 1/3 of eggplant, 1/2 of zucchini and 1/2 of peppers. Spread with 1/2 of ricotta mixture and repeat layering one more time. Layer remaining 1/3 of sauce and eggplant and sprinkle remaining 1/2 cup mozzarella.

Bake in middle of oven uncovered, until top is golden and sauce is bubbling, 25 to 30 minutes.

I've made this several time and everyone asks for the recipe. It's absolutely delicious. It's so good that an 8 year old who hates lasagne, loved it. I normally triple the recipe to make a large pan. I use a mixture of Hot/Mild Italian sausage instead of beef which makes the sausage more flavorful.

This recipie needs some help.
1)must peel eggplant first
2)need to squeeze(actually press) the acid out of the eggplant--as any Italian knows!
3)lighten up on the tomatoe sauce quantity
4)one egg is plenty

Great recipe - I can't wait to try it...My only question is why you use Olive Oil vs. Grapeseed Oil since the burn tempurature is lower...I will report back once I make it!

Lasagna (plural: Lasagne) is a very wide, flat pasta ( sometimes with wavy edges ). It is typically served in alternating layers with cheese, a sauce, and often other ingredients such as ground beef, sausage, or spinach.

This is not Lasagna....A casserol maybe?

Yes, a healthy salad is to go with it. I am sure you may have a nice slice of Italian bread with it for those of you who are use to all those carbs. (Noodles) This is the way your suppose to eat. PORTIONS. Think ...It takes the brain to know whether your full in ten minutes. So, waiting would be advisable. No?

Doesn't say anything about how much lasagna noodle's to cook to use. Who would make it it an 8 inch pan? This recipe need's to be updated..
