Mint and Cumin Couscous

Directions
Combine the chicken broth, salt, and cumin in a medium saucepan, and bring to a boil over high heat. Remove the pan from the heat. Add the couscous and stir to blend. Sprinkle the mint on top. Cover the pan tightly and let it stand until the liquid is absorbed and the couscous is tender, about 5 minutes.

Trisha, orange zest is slivers of just the orange part of an orange's peel. They make a special tool, or you can use a cheese grater. Just be careful not to go through to the white, or it will taste bitter. Rice and couscous can't be switched,
