Food Editor Nancy Dell'Aria updated this famous recipe by using fresh green beans, a delicious new soup from Campbell's and loads of flavorful fresh mushrooms.

Ingredients

Serves:

    • 2 lb fresh green beans, stem ends removed, beans cut in thirds (see Note)
    • stick butter
    • 1 cup thinly sliced shallots or chopped onion
    • 10 oz baby bella mushrooms, sliced
    • 4 oz shiitake mushrooms, stems twisted off and discarded, caps sliced
    • 1 box (18.3 oz) creamy portobello mushroom soup (Campbell’s Select)
    • 1 can (2.8 oz) French-fried onions

Directions

Heat oven to 350°F. Lightly coat a 2-qt shallow baking dish with nonstick spray.

Bring a 4- to 5-qt pot of lightly salted water to a boil. Add beans; cook 7 to 8 minutes until crisp-tender. Drain and return to pot.

Meanwhile, melt butter in a large nonstick skillet over medium-high heat. Add shallots and mushrooms; sauté 5 minutes, or until lightly browned and liquid from mushrooms evaporates. Add to beans. Pour on soup, toss gently to coat; transfer to baking dish.

Top with French-fried onions. Bake 30 minutes, or until hot and bubbly and onions are crisp.

Note: Instead of fresh green beans, you can use 2 lb (12 cups) cooked, frozen.

Planning Tip: Can be prepared through Step 3, covered and refrigerated up to 1 day ahead. Bring to room temperature before baking.

Could not buy the mushroom soup here. Tried 3 different stores. So I used reg Cream of mushroom instead. Will find out tomorrow how it turned out. :) I did the prep today on it so I only have to cook 1/2 hour tomorrow.

The green bean recipes are great. But I have one I've used for years. Saute sliced onions and mushrooms in butter. Add brown sugar to taste, 1 Tbl vinegar (to taste) add green beans....stir well, put on low heat till hot.......an OLD recipe!
