Orange- and Vanilla-Scented Sweet Cheese Latkes

+ VOTE NOWThese sweet latkes are perfect for either breakfast or dessert. Farmers' cheese is a somewhat dry, mild cheese usually found next to the cottage cheese in the dairy aisle. If you prefer, omit the confectioners sugar and top the latkes with your favorite jelly.

Preheat the oven to 250F. Place a wire rack on a rimmed baking sheet; set aside.
In a large bowl, stir together cottage cheese, Farmers' cheese, flour, sugar, orange zest, and vanilla. Add eggs and stir until well combined.
In a large nonstick skillet, heat 2 tablespoons of the oil over medium heat. Using a tablespoon measure, drop 3 tablespoonful mounds for each latke, fitting 3 or 4 in the pan. Cook until golden brown and cooked through, about 2 minutes per side for each batch.
Transfer latkes to rack set on baking sheet and place in the oven to keep warm while you cook the remainder. Repeat with remaining mixture, adding additional oil as needed. Dust with confectioners sugar if desired.
