Paprika Salmon

Chances are, you've already got everything you'll need for this entrée in your pantry, except the salmon, of course. Paprika and lemon add a little flair to a simple weeknight dinner.

Preheat broiler. Line rack of broiler pan with foil.

Using a chef's knife, mince and mash garlic to a paste with a pinch of salt. Stir garlic together with zest, juice, paprika, and mayonnaise. Pat fillets dry. Place fillets, skin side down, on broiler pan. Season each fillet with a generous pinch of salt and pepper. Spread paprika mayonnaise evenly over tops of fillets.

Broil 3-to 4-inches from heat until mayonnaise is slightly browned in spots and fish is just cooked through, about 8 minutes.
