Tuck a peppermint underneath a chocolate kiss and you have a peanut butter cookie decked for the holidays.

Ingredients

Makes: cookies

1/2 cup butter

1/2 cup peanut butter

1/2 cup sugar

1/2 cup packed light brown sugar

1 egg

1 1/4 cup flour

1 teaspoon baking powder

3/4 teaspoon baking soda

salt

18 chocolate kisses

18 peppermint candies

Confectioner's sugar for dusting

Directions

Preheat oven to 375°F. Prepare 2 cookie sheets with butter. In a medium bowl, sift together the flour, baking powder, baking soda and salt. In the bowl of standing mixer, combine the butter and sugars and mix until fluffy. Add the peanut butter and mix until combined. Add the egg and mix until thoroughly incorporated. Gradually add the dry ingredients and mix to form a sticky dough. Roll the dough by teaspoonful and place on the cookie sheet. Bake 8 to 10 minutes or until just golden. Place a chocolate kiss in the center of the warm cookie, allowing the chocolate to melt slightly. Lift it up and slide the peppermint underneath. Place the kiss on the chocolate. Repeat with remaining cookies. Dust with confectioners' sugar.
