Herb Simple Syrup

½ cup sugar½ cup water3 sprigs fresh mint3 sprigs tarragon3 sprigs lemon thyme1 lemon strip (1 inch)



2 oz gin
1 oz fresh lime juice
¾ oz Herb Simple Syrup
2 dashes celery bitters
Mint leaf, for garnish
Lemon twist, for garnish
  1. Make the Herb Simple Syrup: Heat sugar and water in a saucepan over medium heat for 5 minutes, stirring occasionally, until the sugar fully dissolves. Remove the pan from the heat and add to it the herbs and lemon zest. Transfer this to a bowl and place uncovered in the fridge until it is cool. Once the syrup has cooled, transfer to an airtight container for up to two weeks.
  2. Make the cocktail: Add ice to a cocktail shaker, then add the gin, lime juice, herb simple syrup and celery bitters and shake vigorously. Strain into a chilled coupe glass.  Garnish with mint leaves and lemon twist.
