Pineapple Coconut Smoothies

Nothing calls the beach to mind like a cool, sweet drink made with pineapple and coconut. You can add a splash of rum for the grownups.

Ingredients

Makes: smoothies

    • 2 (6-ounce) containers low-fat or non-fat vanilla yogurt
    • 6 cups fresh or canned pineapple chunks
    • 3 cups pineapple juice
    • 1/4 cup granulated sugar
    • 3 teaspoons coconut extract
    • 4 cups ice cubes
    • Garnish: drink umbrellas or pineapple wedges skewered on a toothpick

Directions

Add 1½ cups yogurt, 3 cups pineapple, 1½ cups pineapple juice, 2 tablespoons sugar, 11/2 teaspoons coconut extract, and 2 cups ice cubes to a blender and blend until smooth. Repeat with remaining ingredients for a second batch.

im so... gonna try this pineapple cocnut smoothies it looks and sounds so... good. i think it will a great choice 4 my family. i think they will like it plus it great when it gets to be hot out!!!

Not a fan of most smoothies, but I think I will try this one. It sounds like a pina colada (and what could be wrong with that)!
