Pineapple Glazed Cocktail Meatballs

Try these at your next party...they're so simple to prepare, and the sweet and savory glaze, made with vegetable juice and pineapple juice, will ensure that they're gobbled up quickly.

Ingredients

Directions

Drain the pineapple, reserving the syrup. Stir the cornstarch, 1 1/4 cups vegetable juice and syrup in a small bowl until the mixture is smooth and set it aside.

Mix the remaining vegetable juice, beef, bread crumbs, egg, garlic powder and pepper thoroughly and shape firmly into 24 1-inch meatballs.

Heat the oil in a 10-inch skillet over medium-high heat. Add the meatballs in 2 batches and cook until they're well browned on all sides. Set the meatballs aside. Pour off any fat.

Stir the cornstarch mixture and add it to the skillet. Heat to a boil, stirring constantly. Return the meatballs to the skillet. Add the pineapple chunks. Reduce the heat to low and cook for 5 minutes or until the mixture thickens and the meatballs are cooked through.
