Potato Salad with Bacon Ranch Dressing

For Bacon Ranch Dressing, in a medium bowl combine bacon pieces, milk, sour cream, mayonnaise and salad dressing mix. Cover and chill until ready to serve.

For Potato Salad, set up grill for direct cooking over medium heat. Oil grate when ready to start cooking. Lay potato slices on a baking sheet and spray both sides with nonstick vegetable cooking spray. Place on hot oiled grill. Cook for 20 to 25 minutes or until fork tender, turning every 5 minutes. Remove from grill; cool.

Cut cooled potatoes into bite-size pieces. In a large bowl, combine potatoes, pimientos, olives, celery and parsley.

Using a rubber spatula, fold in Bacon Ranch Dressing until combined. Season to taste with salt and pepper. Chill at least 1 to 2 hours before serving. Makes 6 servings.

INDOOR METHOD: Prepare Bacon Ranch Dressing as directed. Preheat oven to 400 degrees F. Lay potatoes on a baking sheet and spray with nonstick vegetable cooking spray. Roast in oven about 30 minutes or until fork tender turning once. Cool and prepare as directed.

I made this for 4th of July and also bought a deli potato salad for the "fussier" eaters in the family. It went down the disposal after dinner and we all ate the deli salad. What a waste of time and money! Completely tasteless.

Made this on Memorial Day for our bbq. Everyone said it was the best they have ever had! I boiled my potatos, didn't bake or grill them, and it was still great. Next time I will grill the potatos to see if there is athat much of a difference.

I made it just as the recipe said. it was great. even better the next day after the flavors married. I think I will add more sour cream next time I am a little partial to sour cream.

By the way, I added the onioins with the parsly, celery and olives.

hate to say it, but ranch dressing is not the answer. use mayo instead. bacon bits added are a nice touch however, so they are ok. i will never have my potato salad with ranch dressing again after tonight.

It's not potato salad without hard boiled eggs and a slash of vinegar. Forget the pimentos, add cucumbers.

If you like traditional potato salad, and you like ranch dressing, you'll love this recipe. I omitted the olives and pimentoes. My family wont't eat either. As for the onions, you mix them into the salad, too. Enjoy!
