Cucumber, radish, fennel and endive spears work especially well with the flavors of this dip. Other vegetable choices could be red, yellow, orange bell peppers, fresh tender asparagus when in season, cauliflower florets, etc.

Watch the related video to see Gail Simmons prepare this recipe, as well as two other recipes in which she uses preserved lemons.

Ingredients

Serves:

    • 1/2 cup zero-percent fat Greek-style yogurt
    • 1/2 cup sour cream
    • 2 1/2 tablespoons finely chopped preserved lemon rind
    • 1 teaspoon finely chopped fresh dill
    • finely ground black pepper
    • assorted fresh vegetables, cut into pieces for dipping

Directions

In a bowl, stir together yogurt, sour cream, preserved lemon and dill. Season with pepper to taste. Serve with crudites.
