Live and Love to Eat

Ingredients

cooking spray1 tsp flour1 tsp garlic, minced2 Tbsp skim milk2 cup spinach1 tortilla of choice (best to use a high fiber, high protein tortilla)½ tomato, sliced1 Babybel light cheese, diced2 egg whites, scrambled1 Tbsp hummus, if desired

Directions

  1. Heat skillet, then spray generously and whisk in flour.
  2. Drizzle in milk, bring to a boil, then stir constantly, reducing to a simmer.
  3. Add spinach and garlic to milk mixture, stirring until spinach is wilted and well combined.
  4. Spread spinach mixture on tortilla.
  5. Top with cheese and tomato slices.
  6. Lay flat on baking dish and broil until cheese and tomato are warmed through.
  7. While warming, scramble the egg whites. Add to warmed tortilla.
  8. Roll in to burrito shape and enjoy.
