Ramen Fagioli

Pasta e Fagioli, or pasta and bean soup, is the essence of Italian comfort food. Quick cooking ramen noodles get you there faster, but there's no need to let on to your Italian nonna that you didn't use Italian pasta. Chock full of vegetables and beans, this soupy-stew is meant to be thick and hearty.

Ingredients

Makes: cups

Directions

Cook onion and garlic with salt and oregano in oil in a 3- to 4-quart heavy saucepan over medium heat, stirring frequently, until softened and beginning to brown, 3 to 5 minutes. Add celery and carrot and cook, stirring, 1 minute.

Add broth and water and bring to a boil, then reduce heat and simmer, covered, until celery and carrot are tender, 5 to 10 minutes.

Add drained diced tomatoes and white beans and simmer, covered, 5 minutes.

Add ramen noodles and simmer, covered, 3 minutes.

Stir in parsley and season with salt and pepper.

Serve sprinkled with grated parmesan.

Wow this sounds great! I will definitely try this receipt. My son was just asking me to buy ramen noodles. I told me it was too salty, but now I'm going out to buy some and make this! I have to agree teens won't make this, but working mom's will!

I agree, college kids do not have a full pantry. Nothing to cook with. They have cereal, ramen noodles and whatever the folks bring during visits. They only make the cereal and ramen noodles when they don't want to leave the apartment.

If the college student is using Ramen nooddle because it's cheap, I doubt if they would have all those other ingredients, might as well go for the dollar burger, Arbey etc !!

I would go one step further and forget the ramen noodle package and buy noodles at the asian store and use a handful at a time. college kids are not going to make this stuff on a consistent basis anyway
