Ravioli with Green Beans and Brown Butter Sauce

The nutty richness of brown butter transforms leftover green beans. Pair them with cheese ravioli, and you have a quick and delicious weeknight meal.

Ingredients

Serves:

    • 1 1/2 pounds leftover green beans
    • 3/4 stick (6 tablespoons) unsalted butter
    • 2 large garlic cloves, finely chopped
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/3 cup finely grated Parmigiano-Reggiano, plus additional for serving
    • 2 (9 ounce) packages fresh four-cheese ravioli (in the refrigerator section of the supermarket)
    • 1/4 cup finely chopped fresh parsley leaves

Directions

Cut beans into 1/2-inch pieces. Melt butter in a 12-inch heavy skillet over medium heat, stirring occasionally until browned and fragrant, about 2 minutes. Add garlic, salt, and pepper and saute, stirring, until garlic is golden, about 1 minute. Stir in beans and cheese and set aside.

Meanwhile, cook ravioli in a large pot of boiling salted water until cooked through. Drain, then add to skillet with beans, tossing to combine. Serve pasta with additional cheese.

Delish!!!! My kids loved it, and so did my neighbors. It was very easy to prepare, and even the leftovers were good. I will make this again and again. I never would have thought such a simple recipe could be so good. I used frozen green beans.

Recipe was ok, I think it may need a tad more salt. Also, since I live alone I made only one serving of this and it was HUGE, I think a full recipe could easily serve five or six.

This dish was wonderful. It was definately easy to prepare and tasty. The only thing that I didn't add was the parsley. I sprinkled some basil on top instead.

This was the best thing I have made from this site so far. I used frozen green beans and added some bacon to them, but that is the only change that I made.

This was remarkably good for such a simple recipe, and it came together very quickly... so much so that the salad and garlic bread weren't ready yet! Followed the recipe pretty much exactly (used frozen green beans), and can't recommend any changes.
