Ingredients

Serves:

    • 2 cups mixed Texmati white, brown, wild and red rice (such as Royal Blend)
    • 21/2 Tbsp butter
    • 2 medium leeks, white and light-green part only, thinly sliced crosswise, rinsed well and drained
    • 4 oz each) assorted sliced wild mushrooms
    • 2 tsp chopped fresh thyme
    • 1/4 tsp each salt and pepper
    • 1/4 cup chopped parsley

Directions

Cook rice as jar directs.

Meanwhile melt 2 Tbsp butter in a large nonstick skillet over medium heat. Add leeks, cover and, stirring occasionally, cook 5 minutes until crisp-tender. Add mushrooms and sauté 5 minutes or until mushrooms and leeks are tender. Stir in thyme, salt and pepper; cook 1 minute for flavors to blend.

Add rice to skillet, then remaining 1/2 Tbsp butter and the parsley, and toss to mix.

Planning Tip: Can be made without the parsley up to 2 days ahead. Stir in parsley just before serving.
