Roasted Chicken & Spicy Peanut Soba Noodles

SPICY PEANUT SAUCE:

In a small sauté pan heat sesame oil and add garlic and ginger to gently fry until fragrant – about 1 minute. Pour into a blender and add all remaining sauce ingredients. Blend until smooth adding more hot water if necessary to achieve a rich saucy consistency.

CHICKEN AND NOODLES:

Cook soba noodles according to packet directions then drain and pour into a large mixing bowl. Add 4 cups of shredded chicken meat and dress with spicy peanut sauce. Use tongs to work sauce into chicken and noodles gently.

GREEN SALAD:

In a small mixing bowl combine cucumber, cilantro and scallions. Toss gently to combine.

Divide noodle mix evenly amongst bowls and top with a handful of green salad.

I did not have sesame oil so I just used olive oil, I also substituted the noodle for rice noodles. It was super delicious and I my boyfriend loved it!

I made it exactly as the recipe stated and I like ********* like chinese takeout at home--except fresher and lighter. Definitely easy and I'll make it again!

I've made this now two times. I'm also going to use the sauce as a nice fried chicken finger dip at parties I throw. I did, however, like it a little spicier, so I added more sriracha. I also just used the only chinese noodles I could find.

I added a little extra sriracha so it was a little too spicy for my 17 year old but the rest of the family loved it. The veggies on top definitely make the whole dish taste great. Will absolutely make this again.
